Buckbeak wasn't executed that's why they didn't show it, JKRowling never actually said that Buckbeak was executed the first time. In the film they didn't show it because they know that it didn't happen, the executioner hit the fence in the book and the pumpkin in the film. The time travel is just a big loop really.
